In this Cauliflower Hash Brown Avocado Toast (Gluten-Free) recipe, I'm putting a creative spin on everyone's favorite morning staple: avocado toast. If you're like me you might hyperfocus on one specific breakfast for a while and then suddenly you don't ever want to eat it again. That's exactly what happened to me when I discovered these little cauliflower hashbrowns. I was on the hunt for a new breakfast that I could still top with some healthy ingredients because I was really over the texture of gluten-free toast (IYKYK). 

Why cauliflower hash browns?

I loved that these were lower in carbs than most breads while still having a little fiber and protein, not as much as my bread had but still something. These hashbrown patties are also available in a sweet potato version with lower carbs and more prebiotic fiber.

You can find this hash brown brand in both Sprouts and Whole Foods, other brands make similar products but I chose this one because they are a certified B corp. Buying from companies that adhere to the highest standards of social and environmental performance, as well as public transparency and accountability is something I will always opt for when given the option. 

What to top your hashbrowns with?

You can dress them up any way you want, but I went a little twist on the classic avocado toast recipe. After swapping out the traditional bread for cauliflower hashbrowns as the base, I topped them with avocado slices, a little bit of spicy Calabrian chili oil, and a sprinkle of seaweed gomasio for that salty umami crunch. This toast recipe is bursting with flavor and goodness.

Ingredients (select organic when possible)
 ½ Avocado
 1 tsp Italian Bomba Hot Pepper Sauce (or any Calabrian chili oil)

Cook hash browns according to package directions.

While those are cooking, slice your avocado and pull out the Bamba sauce and Gomasio.

When the toast base is ready, transfer to a plate and layer on your toppings and enjoy!
